Vegan Red Velvet Crinkle Cookies

 

Red Velvet Crackle Cookies

Makes about 36 cookies

 

3 cups all-purpose flour

1/4 cup cocoa powder

1 tablespoon baking powder

1/4 teaspoon baking soda

1/2 teaspoon sea salt

3/4 cup Earth Balance buttery spread

1 1/4 cups granulated sugar

3/4 cup plain unsweetened applesauce

1 teaspoon vanilla extract

2 1/2 teaspoons all-natural vegan red food coloring

Powdered sugar, as needed

 

Preheat the oven to 350 degrees fahrenheit.

 

In a mixing bowl, whisk together the flour, cocoa powder, baking powder, baking soda, and sea salt.  In a stand mixer, beat the Earth Balance and sugar until light colored and fluffy, about 5-6 minutes using the medium speed.  Add in the applesauce 1/4 cup at a time, beating well and scraping down the bowl between each addition; beat until well combined and fluffy, about 5-7 minutes.  Beat in vanilla and red food coloring.

 

Add the flour mixture to the wet ingredients, about 2/3 at a time, and beat on low to incorporate, scraping down the bowl between each addition of flour; beat until all the flour is added and just combined.

 

Scoop between a half cup and 1 cup powdered sugar and spread onto a plate.  Using a tablespoon, scoop out dough then roll into a ball and dredge in powdered sugar.  Place on a nonstick cookie sheet and gently press down slightly to flatten the cookie.  Bake between 11 and 12 minutes, but no more.  Let sit for about a minute before moving to a cooling rack to cool completely.  Enjoy!
